Subtle dairy aroma. Characteristic goat’s milk flavor, smooth and balanced. Slightly elastic texture, and very firm. Semi-soft. Uniform and
intense white color. Irregularly-sized holes spread evenly throughout and a shiny surface.
RIND
Faces decorated with ears of wheat and zig-zag grooves on the sides. Color: orange.
STORAGE
Keep refrigerated between 4C/40F and 8C/46F. Cover any cut surfaces with aluminum foil or cling film.

20-30 days.
TO SERVE
Remove the fridge from the fridge and leave until it reaches a temperature of about 20C/68F, at which point its flavor and aroma will be at their most intense.
